咖啡豬腳
Coffee Taste Pork Knuckles

◎材料: 1. 豬腳 1隻 2. 蔥 2隻 3. 薑 一小段 4. 研磨咖啡粉 30公克 5. 醬油 1/2杯 6. 冰糖 1/3杯
◎煙燻材料: 1. 研磨咖啡粉 15公克 2. 二砂糖 15公克 3. 甘蔗皮 一小段
◎成品製作流程: 1.先將豬腳醃醬色,入油鍋過油成焦色狀。 2.把材料2.3.4.5.6煮成滷汁,放入過油的豬腳滷煮。 3.乾鍋放入煙燻材料1~3,再把滷好豬腳,放入煙燻入味,著色至金黃色即可。 4.刷少許香油,增加亮度,裝盤上桌。 |

◎ Directions of the Dish: 1. Marinate the pork knuckle in soya sauce until it has brown color. Fry it in a cooking wok with hot oil until it turns dark brown. 2. Boil Ingredients 2, 3, 4, 5 and 6 in a pot until the fluid is thickened and marinade is made. Put the fried pork knuckle in the marinade and boil it. 3. Put the Smoking Ingredients 1 ~ 3 into a dry cooking wok. Put in the marinated pork knuckle for smoking until it turns golden brown. 4. Pour few drops of sesame oil over the pork knuckle to give it a glossy look, and then put it on a plate to serve. |
